This beautiful chilled soup is a refreshing bowl for the summer table. A soup so simple to create and a great take-along on your summer outings. Tomatoes, watermelon chunks and fresh strawberries are quickly blended and chilled. Serve with diced cucumber, cherry tomatoes, strawberries and edible flowers from the garden.

CHILLED GAZPACHO

Typically Gazpacho is a vegetable based cold soup, with tomatoes, cucumbers and peppers. But Summer Gazpacho brings together all of the favorite fruits of summer, blended and chilled for a just slightly sweet soup. The tomatoes and jalapeño balance the sweetness of the watermelon and strawberries. I used a combination of tomatoes and colorful yellow and gold cherry tomatoes which gives the soup the lovely orange hue.

Sweet fruit combined with salty tomatoes and percorino cheese make a delightful salad combination. For this recipe use the best fruit you can find, ripe melon, nectarines, and cherry tomatoes. Each ingredient is dressed individually with just lemon juice a couple capers and red pepper flakes. Top the salad with shaved pecorino cheese and fresh basil leaves. Bella!
