Need to tend to a cookie-and-chocolate fix in a hurry? Here’s one of my go-to for the ultimate easy bake cookie. These cookies are reminiscent of classic chocolate wafers (might they lend themselves to an ice box cake?-must try). I love recipes that use on-hand pantry items, mix in one bowl and bake in about 5 minutes; total of fifteen minutes and it’s cookie time.
I have been baking these cookies for years and my newer adaptation of the recipe relies on special dark chocolate cocoa. After trying lots of cocoa powders, I opted to use a pantry basic, Hershey’s Special Dark Cocoa. I chose easily accessible ingredients, since this recipe is part of my upcoming third Little Jewel Cookbook, The Beach House, simple recipes for cooking in the holiday rental. The resulting cookies are such a deep brown, and not too sweet, made rich with plenty of salted butter, what is not to love?

When I say they bake in 5 minutes, it’s for real. They spread, puff slightly in the middle and develop charming craggy-crisp edges. They are a thin delicate cookie, but perfect for a small cookie sandwich filled in whipped cream or ice cream.

Bake on prepared half sheet pans in the middle rack of the oven. I bake only one sheet pan at a time, to monitor their speedy bake time. Be on guard for the edges burning. This small batch baking recipe yields only 2 dozen cookies, perfect for a treat at the Beach House or your house.
