A Wintery salad for all-year long-Radiccio & Pear Salad No.634 in the Collection Membership.

RADICCHIO

If you have not met Radiccio, it’s time to get acquainted. These lovely colorful leafy greens are a bitter but sweet green to use in salads. There are many varities, you can find them at your local Farmers market. They are noted for their colorful leaves. The one I used for this salad is Castelfranco Radicchio. I was lucky enough to grab one at my local Farmers market.

Some of my favorite salads include Radicchio. Most are wintery, however these salads are perfect anytime. This salad is adapted from Cap Beauty, my favorite site for food and all things beauty.

RADICCHIO & PEAR SALAD

The slight bitterness of the greens are tempered with sweet slices of fresh pear. The dressing is a cider vinegar-lemon-and dijon mix, all ingredients which are in your pantry. The crunch from the hazelnuts completes the salad. Savor Radicchio & Pear Salad No.634 in the Collection Membership.

SALTY & SWEET

Who does not love granola? I am a granola nut and have a selection to choose from but  LA-Style Granola recipe still reigns supreme! What makes this recipe different is that it’s sweet & salty a great combination. Maple syrup and spices complete the granola. Just a note, when I first made the granola I thought it tasted a bit too salty. however after serving with Almond milk, the balance of salty-sweet was perfect.

This recipe is based on one from Lemon, Love & Olive Oil by Mina Stone. I could not resist and cookbook based on some of my favorite ingredients, what’s not to love? Vegan and gluten free, a nice addition to your breakfast routine. No. 635 in the Membership Collection.

Spring is here, time for health and beauty to begin again. This soup is creamy, yet no dairy products are involved. Basic Pantry ingredients create this healthy every-day soup.

Now that asparagus is in season I love to grab bunches at the farmer’s market. This easy soup is on my healthy-bowls list, quick and nourishing. The soup comes together quickly with some basic kitchen items.

Irish Soda Bread Pudding

This is no blarney, this classic Irish Soda Bread Pudding is filled with currants, caraway seeds and topped with a buttery Irish Whiskey Sauce is one is the best-No.632 in the Membership Collection.

IRISH SODA BREAD

I think this soda bread recipe is the best I have ever had and shared with me by a dear friend. This is his Irish Mom’s recipe, very true to her roots. After baking two loaves of this simple bread I use most of one loaf for this pudding.

IRISH SODA BREAD PUDDING

Enjoy this pudding for a sweet breakfast or dessert. Best warm from the oven and topped with a rich butter-Whiskey sauce. An extremely simple recipe using only Irish Soda bread cubes, butter, half & half, eggs and vanilla.

After whisking together the cream sauce pour it over the bread cubes and bake. When it is puffed and brown remove from the oven and sprinkle with crunchy Demerara sugar.

Roasted Kale Salad with Crispy Parmesan & Bijouxs House Vinaigrette | Bijouxs Little Jewels

Crispy toasted leaves of kale with melted Parmesan are all tossed in my classic French House Vinaigrette, this is NOT your Mother’s kale salad-find out why.

ROASTED KALE WITH PARMESAN CHEESE

The first part of the salad is the roasted kale & parmesan cheese combo. The kale chips are doused with Parmesan cheese and roasted until both are brown and and the cheese is crispy. The salad is off to a great start.

BIJOUXS FRECH HOUSE VINAIGRETTE

I brought you this dressing way back when during my days as a private chef. It was a favorite then and still reigns supreme today. For this salad I added some garlic for the tarragon, more punch to the dressing.

SALAD COMPLETE

Roasted Kale Salad with Crispy Parmesan & Bijouxs House Vinaigrette | Bijouxs Little Jewels

After you have roasted the kale, make the vinaigrette. Then come the salad completion parts: Some remaining  kale leaves and torn into pieces and serve as the bas of the salad. Toasted with the walnuts and some extra Parmesan cheese to embellish the salad serving.
