Radicchio Salad with Green Olive Dressing

Radicchio Salad with Green Olive Dressing | Bijouxs Little Jewels

The tartness of the Italian Radiccio is softened by a creamy green Castelvetranos olive dressing along with the saltiness of Parmeasan cheese- Radicchio Salad with Green Olive Dressing a salad to love.

RADICCHIO 

Radicchio is an Italian green that is in the chicory family. It comes in many varieties, but my favorite is the beautiful heads with green tinged leaves,  Radicchio di Choiggia, the tight heads with beautiful purple-pink leaves, this is what you most often see at the famers markets. My favorite is Radicchio de Vento, with its delicate pink leaves, make a lovely salad, grab it when you can find it.

GOAT CHEESE BAKED WITH MARINARA SAUCE

This is a no brainer guys. My favorite cheese, Humboldt Fog Goat Cheese from Cypress Groves is baked with my Basics Tomato Sauce spiked with a few herbs. A warm a bubbly dip to easily slide out of the oven when guests arrive. Pair with crispy, thin Grissini bread sticks, grab a sip and enjoy your party.

Simple Rhubarb Crisp

Rhubarb season is upon us. What’s better than a simple Rhubarb Crisp with Strawberry ice cream? Wow, I’m up to recipe No. 642 from the Collection Membership.

RHUBARB SEASON

I’m starting to see fresh Rhubarb in the markets, I saw Melissa’s Produce, so it is time to grab some and bake a simple crisp. Actually my neighbors grow it, I will have to look into this. It is a very tart vegetable, so many times you see it paired with strawberries for sweetness.

GRANDMA’S RUBARB

I have written about my Nebraska Grandmother, who came to LA later in her life. She really knew her way around rhubarb, she grew it in her suburban garden, along with potatoes and of course chickens. She was a farmer so this was normal for her. She always made a Strawberry Rhubarb pie, but I opted for something simpler like this crisp.

ROASTING VEGETABLES

Roasting vegetables intensifies their flavors, and in this case the sauce creates a crispy brown profile I have not tasted in any other Brussels spouts recipe. These babies are crispy and flavor packed. I have printed  my take of the original recipe, however, next time I will start with half of the salt, then add additional to taste.

TOPPINGS

I like the salty kick of finely grated Parmesan cheese and creamy crunch from the Pine Nuts. So good you will want to sample it right out of the baking dish, like I did. I would serve these alongside simple roasted chicken or plain roasted meats.

FRESH FRUITS AND VEGETABLES

The simple ingredients bring all the veggies and fruits you need to ensure your health. Fresh spinach, carrots, cucumber, tomatoes and beel pepper are a perfect combo for a make-head salad. I made a large one here and was able to enjoy it for a few days.

NO OIL SALAD DRESSING 

The salad uses a citrus no-oil salad dressing which keeps the vegetables crisp during the day, and even overnight. Use your favorite veggies for your salad. I added some Total Immune Blend from Vimergy to pump up the goodness.
