ON THE MENU tonight, Chicken Tagine with Green Olives & Preserved Lemon, a favorite No. 613 in the Membership Collection.

Tagines are exotic and comforting at the same time: the pungent spices, a juxtaposition of the salty and sweet, combined with meats and vegetables gently simmered tender in a delicate broth create a different take on a comforting stew. This simple chicken tagine is a Bijouxs I would like to share.

ABOUT TAGINES

More info: Tagine is the name of the stew, and also the name of the beautiful glazed clay vessel in which tagines are prepared. No worry, you do not need a tagine (the vessel) to make a tagine (the stew) – a heavy Dutch oven with a lid will do. The things I love about tagines (the stews), besides the incredible layers of flavors, are that they are easy to prepare and utilize less-expensive cuts of meats, pure Bijouxs.

SIMPLE RECIPE

The basic technique for most tagines is rather simple, place the meat in the tagine (or dutch oven) add the vegetables, spices, and water, then cover and simmer, that’s it. Most tagines do not require an initial browning of the meat and utilize dried spices, olives, etc. many available in your pantry.

COOKING IN A TAGINE

In my beautiful azure blue tagine I purchased long ago from Global Table in NYC, it is import to heat the tagine slowly on the stove, a flame tamer really helps. I recently found a pretty tagine at Willams Sonoma. The key is that the ingredients do not dry out due to the conical shape of the lid which keeps the liquids flowing back onto the ingredients. Important for getting really tender chicken in this recipe.

WINTER SALADS

We all crave the warm sunny days of Summer, but we have to get through Winter first, then Spring can open the door. Salads are a great way to keep freshness and brightness in the dark days of winter. There are many salads in the Membership Cookbook Collection to choose from with the convenient search “salads”.

PANTRY RECIPES

I love pantry recipes, they make life in the kitchen easier. This salad/condiment makes use of many on-hand ingredients in your pantry. I always keep jars of olives handy and the green Castelvetrano olives from Sicily are a favorite. They have a rich buttery taste, easily available in the supers. Celery is always on hand for snacks. Italian parsley, easy to find and even easier to grow, I have a bumper crop!

I have always loved the books from the Canal House Series, I think I have them all. The food style and photography feels much like my own. Simple beautiful food for the home cook. The Pronto Cooking is a favorite. Simple recipes to love and where I adapted this recipe. The orginal recipe calls for fennel, but my on-hand peeled celery delivered the same crunch.

CITRUS SEASON

Late November is the start of citrus season along the Cali coast. Here in California we really do mark our calendars for the citrus to arrive. This salad uses the pulp of the lemon to create the bright fresh dressing for the salad. Seedless lemons, found at Trader Joes, are perfect, they made is so easy supreme the sections used for the dressing. Supreme means removing the bitter peel and pith and removing the membranes around each segment so the juicy flesh is exposed. It’s often seen when citrus is added to fruit salads or used as a garnish.

SALAD VERSATILITY

Green Olive, Celery & Parsley Salad of course makes a light side salad along any main course and a great topper for grilled fish. Some other ideas to for the salad include tossing with noodles or pasta for a on-the-go lunch salad or top your avocado toast for a change.
Small plate salads on hand are always a treat served alongside almost any meal. I like to keep a variety of small plate salads on the ready to serve with cocktails, as an appetizer or a meal side option.

PARSLEY & OLIVE SALSA

The definition for salsa is “A spicy sauce of chopped, usually uncooked vegetables or fruit, especially tomatoes, onions, and chili peppers, used as a condiment”. That seems to ring true for this lively sauce. I saw the sauce here and wanted to try it, but of course you need to be a member to see the recipes, it’s that way all over-no more free online. In fact, I too had to move to a Membership Collection for my 500+ recipes, the website costs have really sky-rocked.

USE WHAT YOU HAVE

This is such a great start to the New Year, cleaning out the refrigerator/freezer! A no waste tactic to use what I already have on hand-a lesson from my favorite book “An Everlasting Meal” by Tamar Parker. I use her wonderful way with on-hand vegetables, as in my Autumn Roasted Vegetable Salad Recipe No. 245. Worth a look.

BIJOUXS NO.1

For this recipe I reworked my favorite raw olive sauce recipe, and my FIRST ever post on the website, Summer Tomato Sauce which I still use on regular meal rotation. I created this current sauce as close to the one I wanted. The jalapeño is what keeps this in the spicy salsa family!

Crispy chicken is bathed in the Parsley & Olive Salsa and served family style on a platter. I add to this with a simple green salad and a scoop of chocolate gelato for dessert. Simple.

Classic Puttanesca with tomatoes is a house favorite and part of my first cookbook Family & Friends. Now it is joined by a green version of the classic dish, Tagliatelle with Puttanesca Verde. Pasta is always a little jewel.

PUTTANESCA VERDE

What can I say of classic puttanesca sauce that has not already been said with my favorite Oven Puttanesca Recipe. Now it’s time to add another version, this time think green. I love new takes on classic recipes, after all “food fads come and go, but the Bijouxs remain.” I have amassed a collection of pasta recipes on the blog over the 9 years and this one with olives is a favorite. But now, Puttanesca Verde comes in and adds depth to this classic dish.

Greens are a favorite in the Bijouxs Kitchen along with olives, so they are natural companions for this dish. I always love the rustic, simple pan sauce pasta recipes- quick, flexible, economical and tasty.

There is not much to prepare this little jewel, boil water for the pasta and start the sauce. I used a whole wheat tagliatelle, to add an additional level of flavor.
