Radicchio Salad with Green Olive Dressing

Radicchio Salad with Green Olive Dressing | Bijouxs Little Jewels

The tartness of the Italian Radiccio is softened by a creamy green Castelvetranos olive dressing along with the saltiness of Parmeasan cheese- Radicchio Salad with Green Olive Dressing a salad to love.

RADICCHIO 

Radicchio is an Italian green that is in the chicory family. It comes in many varieties, but my favorite is the beautiful heads with green tinged leaves,  Radicchio di Choiggia, the tight heads with beautiful purple-pink leaves, this is what you most often see at the famers markets. My favorite is Radicchio de Vento, with its delicate pink leaves, make a lovely salad, grab it when you can find it.

GOAT CHEESE BAKED WITH MARINARA SAUCE

This is a no brainer guys. My favorite cheese, Humboldt Fog Goat Cheese from Cypress Groves is baked with my Basics Tomato Sauce spiked with a few herbs. A warm a bubbly dip to easily slide out of the oven when guests arrive. Pair with crispy, thin Grissini bread sticks, grab a sip and enjoy your party.

Roasting vegetables intensifies their flavors, and in this case the sauce creates a crispy brown profile I have not tasted in any other Brussels spouts recipe. These babies are crispy and flavor packed. I have printed  my take of the original recipe, however, next time I will start with half of the salt, then add additional to taste.

TOPPINGS

I like the salty kick of finely grated Parmesan cheese and creamy crunch from the Pine Nuts. So good you will want to sample it right out of the baking dish, like I did. I would serve these alongside simple roasted chicken or plain roasted meats.

Nancy Silverton is a favorite chef of mine, and dating my self, I even took at bread baking class with her when La Brea Bakery was hot. So glad I did it, as well as dining at Osteria Mozza. I love this salad and I think this salad was a popular salad, so give it a try.

RADICCHIO

If you have not met Radiccio, it’s time to get acquainted. These lovely colorful leafy greens are a bitter but sweet green to use in salads. There are many varities, you can find them at your local Farmers market. They are noted for their colorful leaves. The one I used for this salad is Castelfranco Radicchio. I was lucky enough to grab one at my local Farmers market.

Some of my favorite salads include Radicchio. Most are wintery, however these salads are perfect anytime. This salad is adapted from Cap Beauty, my favorite site for food and all things beauty.
