Spaghetti with Marinated Artichokes

Spring is finally here! Artichokes are popping up everywhere from famers markets to the supers. This recipe is an example of a fresh, simple recipe that can be used to create many other recipes, No. 638 Marinated Artichokes with White Wine from the Collection Membership.

MARINATED ARTICHOKES

I love making this classic recipe at home. The very best option is to find small fresh artichokes, or frozen, but in this case I used canned artichoke hearts and made to make them due. They are small, so that was a win for this recipe.

MAKE IT FRESH ALONG THE COAST

Living along the Central Coast brings and with it miles of farm fields, and some of the best produce in the Golden State.  Artichokes are a big crop along the coast. We had an Artichoke Festival for years, but the tough times caused them to fold. This recipe is quite simple with only artichokes, garlic, fresh thyme, Chili de Arbol and bay leaves for the marinade. The olive oil, garlic, lemons and white wine create a delicious sauce. After the sauté on the stovetop, drain the artichokes but reserve the cooking liquid. It will keep the artichokes full of flavor and can be the base for other recipes. Serve them with hummus dip and pita for an appetizer.

SPAGHETTI WITH MARINATED ARTICHOKES

I reheated the marinated artichokes gently on the stovetop and added some extra olive oil. Then I added some al dente spaghetti to the pan and created the pasta dish shown. I removed the herbs and bay leaves but the left the lemon peel in, it adds a fresh bright bite to the pasta.

SPRING IN THE GARDEN

As we all know this Spring weather has been a bit wonky everywhere, hard to plan a garden this year. I have held off on planting my lettuce and herbs, the fog has made it dismal here on the CA Coast. However, my tried & true artichokes mananged to squeek out a few artichokes.

ARTICHOKE PANINI

The dreary weather has kept me indoors but I happened on a delighful recipe from Joy’s Once Upon a Thyme featured in Diner’s Driveins and Dives. Joy created a crispy artichoke panini served with the best dressing. They are located in beautiful lush Chehalis Washington.

BASIL VINAIGRETTE

Her salad dressing is so much in demand that they sell bottles of it at the restaurant, really. While I do not have her exact recipe, I have come pretty closed by tinkering with the ingredients. The episode on DDD does tell more about the basil dressing, which she says people want to drink, it’s that good. Photo from website.

Fresh Fennel is a little jewel to include in your garden. The fragrant green fronds create a rich green pesto, another little jewel from the Bijouxs kitchen.

FENNEL IN THE GARDEN

I have always included fennel in my gardens, even now in my tiny garden at my bungalow up the Central Coast. I was gifted a large fennel plant from a neighbor’s garden. Fennel bulbs multiple, so my neighbors dug up a large clump of bulbs to share. Turns out fennel is fussy about a transplant, there is a long tap root and you really have to keep if watered during its adjustment time. I cut back the fronds and planted in rich planting mix, after a few months my fennel is thriving.

FENNEL IN THE KITCHEN

I have used the bulbs in a variety of recipes, cooked and raw in salads. Fennel has a mild anise/licorice taste. You will see many times fennel a part of Italian cuisine. The bulbs can be braised, with cream and cheese, also roasted and put into salads and pasta. One of my favorites is this Blood Orange, Fennel & Radicchio Salad. Thinly sliced fennel adds the crisp crunch to the beautiful salad made colorful with rich hues from Blood Oranges.

FENNEL PESTO

So, what to do with all the luxuriant fronds that accompany the fennel plant? What came to mind was a pesto, which I have made with greens other than basil. After a checking the internet I discovered that you can basically just substitute fennel fronds in place of the basil-so simple. Many times, if I do not have pine nuts, I swap out walnuts in my pesto, as I did in this recipe. I used the basic ratios of my original basil pesto recipe.

There are of course many ways to use the pesto, just as you would use basil pesto. I liked this pesto as a dip for a steamed artichoke or spread on a sandwich or tossed with pasta. Fennel a little garden jewel.
