Instant Pot Canyon Bistro French Onion Soup | Bijouxs Little Jewels

Classic French Onion Soup is a perfect candidate for the Instant Pot. The actual soup cooking time is only 5 minutes in the Instant Pot, but the real key is the caramelization of the onions, don’t skip and don’t rush this for a completely authentic French Onion Soup, which is a true little jewel.

CANYON BISTRO’S  FRENCH ONION SOUP

For years I have used Julia Child’s classic recipe for French Onion Soup from Mastering the Art of French Cooking. Many times over, with diversions to try other recipes over the years. One diversion was the Canyon Bistro’s French Onion Soup. I sampled the soup at the restaurant back in my LA-life days. The classic white lion’s head bowl was served bubbling and dripping with melted with cheese, really what is not to love?

Perched up at the top of Topanga Canyon, between Malibu and the Palisades, it was a destination restaurant for me.

GROUND THYME

I discovered a reprint of the restaurant recipe online, and I could see what I tasted that had made the soup different. A touch of garlic and ground thyme are both part of the recipe. Ground thyme has NOT been one of my on hand spices, but I now see the value of the ground version of the spice. When added to the soup. it imparts a herbal note, without adding any leaves to the soup. I tried grinding my own, but it was not fine enough. Ground Thyme, what a cooking revelation.

CARMALIZED ONIONS

One important step that cannot be rushed is the caramelization of the onions. The ’sauté’ mode of the Instant Pot works perfectly. It defaults to 30 minutes which is exactly the time it takes to render the onions a dark golden brown. Covering the pot with a tempered glass cover at the beginning of the process softens the onions. Uncover, then it’s on to browning, stirring every couple of minutes. Stay focused on this step and you will be rewarded with golden brown onions, ready for soup.

FRENCH ONION SOUP

The first step after browning the onions is to deglaze the pan with the vermouth, scraping to loosen all the brown bits for the soup. 

Next steps are quick and simple, add the broth, Worcestershire, ground thyme, and white pepper.

Set the pressure lid to ‘seal’ and set pressure cook on high for 5 minutes. It takes a few minutes to come to pressure, then the 5 minute timer will start.  At the end of cooking allow the pressure to release naturally, about 15 minutes. Move the valve to ‘venting’ to check for any remaining steam. 

SOUP’S ON

Preheat the broiler. To serve, ladle hot soup into oven proof bowls leaving about 1/2” from the top. Add 2 slices of toasted baguette and a 2-3 thick slices of Gruyere cheese to each bowl. Place bowls on a sheet pan, broil for about 5 minutes or until the cheese is bubbly and running down the sides of the bowls.

Carefully remove from the broiler and allow soup to set for a few minutes before serving. It is nice to present the soup bowl on a plate to catch the running cheese.

Cobblers are at the top of my simple go-to dessert list. A couple favorites inlude a Basic Strawberry Cobbler and my all time favorite Pumpkin Cobbler. Cooking in a cast iron skillet makes this dessert so easy.

BIG SUR BISCUITS

My Big Sur Biscuits are wonderful, but without time and guests on the way I resorted to buttermilk canned ready-to-bake biscuits, which actutally were not bad. Look at the label for the ingredients many have Palm Oil, might want to avoid those. There are other natural biscuits alternatives to try.

Blueberries are a household favorite for desserts, breakfast and morning smoothies. My current favorite is Wyman’s Wild Blueberries frozen and perfect to keep on hand.
I love them on my Buckwheat Pancakes with Blueberries, thin, crispy with a nutty flavor.

Simple Strawberry Tiramisu

Simple Strawberry Tiramisu | Bijouxs Little Jewels

Strawberry season is finally upon us. The berries are beginning to show up at the roadside farm stands along the Central Coast. I always pull over and grab some berries, early season or not, they are still sweet. Simple Strawberry Tiramisu is my go-to for an easy, light true Little Jewel from the Kitchen.

STRAWBERRY SEASON

Just as the berries burst on the scene, so does the California Strawberry Festival. 2024 is looking to be a better year for the berries. The festival is being held at the Ventura Country Fairgrounds. The festival is sponsored by major companies and best of all money raised is donated to charities.

SIMPLE STRAWBERRY TIRAMISU

This recipe was inspired from the great Chef Ottolenghi’s Strawberry Tiramisu Cake. Roasting the berries produces a sweet syrup to layer with the Ladyfingers. My changes included sizing down the recipe, making one 5×8 inch loaf. To further simplify, the filling consists of thick Greek yogurt lightened with whipped cream, vanilla and a shot of Grand Marnier. So good. I also used supermarket Ladyfingers, they are usually right next to the strawberries. All the ingredients are easy to find in local supermarkets.

Pappa al Pomodoro

This simple soup is my year-round favorite, often made with canned San Marzano tomatoes when the fresh tomatoes disappear. Pappa al Pomodoro is a true Little Jewel.

THE RIVER CAFE

One of my favorite soups, hand down. I first tried this Italian classic in, of all places, London at the famed Rogers and Gray restaurant the River Cafe. I can not define the simplicity of this classic Tuscan Soup, but the flavor of that journey remains. This is really what Italian rustic cuisine is all about.

TOMATO & BREAD SOUP

What could be more basic that tomatoes, garlic and olive oil, built into a satisfying soup using day-old rustic bread. Italian genius. Tomatoes, fresh or canned, are simmered with garlic and olive oil, then day old rustic bread is added at the end to create an amazing bowl of soup. I think this about as close as food served in Italian homes.

SIMPLE AND RUSTIC

Chefs Roger and Gray created a window into Italian cuisine. The restaurant and their classic cookbook “Italain Country Cookbook” 1995 is one every home cook needs to have on their shelf. More than just a cookbook is speaks to a way of life and beautiful cooking in Italy. Nothing goes to waste.
