My Everything Salad is a delicious antidote to avoid food waste in the kitchen, another Bijouxs Membership Collection.

MY EVERYTHING SALAD

I have been creating endless salads using leftover ingredients in the kitchen fridge for years, hardly thinking of them as a real recipe and hardly photo worthy. I came across this salad, and it struck a cord with me. Many of the ingredients were things I typically have on hand-cooked grains, beets, carrots, green onions, cucumber, and fresh herbs. The only to-get items were the pomegranate seeds and Shishito peppers, made easy via Trader Joe’s.

NO FOOD WASTE

I am working hard on reducing any food waste. If I cook a recipe for the blog I share it with friends and neighbors. I found that freezing large quantities of food, did not work for the solo me. I am constantly moving on to the next thing. So, leftovers in my fridge are constantly reimagined into something, interesting or not so interesting.

 

BEAUTIFUL FOOD BY DESIGN

Again, I go back to my Bijouxs basic mantra ‘“the everyday beauty all around us, right here in our kitchens.” I think even the rag-tag kitchen stragglers can be made into something healthy and beautiful-avoiding any waste.

Garlic White Beans with Spicy Black Olive Vinaigrette | Bijouxs Little Jewels

These beans are so much more than just a bowl of beans, they create and contribute to a great number of dishes and are a great new Little Jewel from the Recipe Membership Collection.

SIMPLE ITALIAN FOOD

These beans come together in a flash and are a favorite that I have adapted from Canal House PRONTO! 2013. To keep things simple, use canned beans drained and rinsed. Place the beans in a bowl then start mixing in the other ingredients. With so few ingredients in the recipe using the highest quality ingredients does really make a difference. As you can guess, a really good olive oil is a must! Novello extra-virgin olive oil was my choice as it is in season. I usually find some at Trader Joe’s but only in January, as this olive oil is an early harvest. Fruity green olives and green grass overtones, yum!

TOAST WITH BEANS & SAGE

WINTER SPICE MIX

I have been circling around the house avoiding the foggy days here on the Central Coast. My comforts included the bowl of Spiced Winter Oats with Fruits & Nuts, enjoyed anytime of day. Begin by make the Warming Winter Spice mix. You will use this for more than these oats, sprinkle on buttered toast, or add to your yogurt bowls. The Spice Mix is inspired from one I purchased long ago in San Francisco from March SF. The store is lovely, do check it out. I set out to recreate this spice and I think I got very close. A blend of cinnamon, allspice, anise and black pepper combine for peppery-warm mix.

STEEL CUT OATS

I decided on Steel Cut Oats which are simmered with a touch of tahini and the spice blend. These two ingredients are what make this oatmeal special.  Water is added and the oats are cook to the desired level of creaminess. The oats are spooned into bowls, adding dried fruit such as raisins, and sweet papaya (my personal favorite, feel free to used dried) along with nuts such as pistachios and hazelnuts.

WARMING BOWL OF OATS

Green Goddess Salad with Crunchy Granola is a light and lovely salad with the surprise crunch from seeded granola. Salads are always a little jewel from the Bijouxs Recipe Membership.

GREEN GODDESS

Salads are at the top of my list for meal-makers and starters. I am always keeping my eyes out for new ways with the salad bowl.

This salad is a fresh take on the Green Goddess salad, with a much lighter than usual green dressing. I enjoy the fresh herbs, avocado oil and Dijon mustard that join for the dressing. I used Little Gem lettuce a favorite, along with leaves of red radicchio for color & flavor.

CRUNCHY SEEDED GRANOLA

The surprise here is a crunchy granola topping in lieu of the usual croutons. A simple seeded granola is baked with seeds; pumpkin seeds, sunflower seeds, flax seeds and rolled oats. Spiced with red chili flakes and honey for a sweet-spicy kick.

SPICE ROASTED PUMPKIN

This first recipe appeared a while back, wow it’s been almost 10 years! This is an another share of this spice roasted pumpkin, it’s that good. The soft, salty- sweet slices are a great side to add to the holiday table.  The recipe is at home with a traditional turkey dinner or as part of my vegan Everything But the Bird menu.

MASHED PUMPKIN WITH MAPLE AND PARMESAN CHEESE

If you have roasted a large pumpkin like I did, aQueensland Blue,  chances are you will have some leftovers, which are perfect for the salty-sweet mash, a more traditional take on pumpkin.  By using the already spiced roasted pumpkin slices creates a great base for another pumpkin side dish. No boring sides on my table. The pureed pumpkin is spiked with bacon bits and maple syrup. A dollop of butter, some Parmesan cheese and off into the oven to bake into a buttery spiced goodness.
