WILD MUSHROOMS

Well, not really wild, but cultivated species of the ever elusive mushroom. Pictured here are a collection from Santa Barbara farmers market, these will create a bellissimo risotto.

RISOTTO

If you have some fears about making risotto, fear not! It is an easy, creamy, comforting Italian dish you will make again and again. After all, it’s just rice.

There are many recipes to prepare risotto, too many to count, but Wild Mushroom Risotto is one you will want to collect. This recipe is easy, in that the mushrooms and risotto are sautéed together, keeping things simple.

This risotto keeps the mushrooms the same size as the risotto to create an even texture. Make sure you do not overcook the rice, keep a soft toothsome chew. It is ready when you can drag the spoon across the pan bottom and a trail remains. Remember the rice will continue to cook after you remove it from the heat.

I served the risotto in my favorite bowl handmade by a friend back home when I lived in Pasadena, great memories! Cheers.

Tomato season is just the best, and it’s here. Simple Marinated Heirloom Tomatoes on the dining table today. Membership Collection Recipe No. 605.

SUMMER TOMATOES

Up along the California Central Coast farming is going strong, with berries, stone fruits and our favorite fruit, Heirloom tomatoes, making an early appearance. These Heirloom beauties need little adornment to bring to the table.

MARINATED TOMATOES

Slicing the tomatoes crosswise exposes the juicy interiors helping the marinade flavor penetrate the tomatoes. Finely chopped red onion, fresh garlic, chopped herbs such as parsley and basil are key ingredients. Just a touch of maple syrup and salt soften the marinade’s edge.

Plate the sliced tomatoes in a single layer on a large platter then top with the marinade. As with most marinades, allow time for the flavors to meld, about 30 minutes. I made my tomatoes before the meal and stored for a couple hours.

I served the marinated tomatoes with thick slices of sourdough bread topped with Goat cheese and lightly broiled. I wanted to photograph that image but the tomatoes and toast disappeared from the platte! Sign of a good recipe.

SUMMER CORN

Is there anything better than sweet summer corn? I love summer produce, and corn is front and center. There are many ways to prepare corn, I thought I had tried them all until this oven roasted in the husk, yes, along with the silks could not be simpler. Really not much of a recipe, but yes, you do need to turn on the oven. I have made corn on the cob on the grill, but removed the silks and soaked the corn in water before placing it on the grill. Now I see there really is no need for this step and I will try corn on the grill with a staple flame using this no-fuss method.

COCONUT MILK

This simple braising method creates tender chicken with a light coconut sauce infused with garlic and herbs. Braising is a cooking method that is not that widely used, but should be revisited in our cooking collection.

Braising is a cooking method that combines both wet and dry heat. Food is first seared at a high temperature, then simmered in a covered pot with a liquid. This method is great for tougher cuts of meat, making them tender. Perfect for these boneless chicken thighs.

FRESH HERBS

The fresh thyme is important to this recipe, adding a woody hint along with the garlic infusing flavor into the rich coconut milk braising liquid.

French Strawberry Preserves

More and more, we all wonder as we cruise the vast supermarket aisles, “Where did this food come from and what’s really in it?” Food labels are akin to reading hieroglyphics. Consider this simple, classic everyday beauty, French Strawberry Preserves – just a few ingredients with loads of fresh flavor.

FRENCH PRESERVES

This recipe is adapted from Mes Confitures: The Jams and Jellies of Christine Ferber, real French preserves. The difference I can see is the technique for making the preserves, it is a very easy 3-day procedure, and it produces the best jam I have made thus far.

FRAISES DE BOIS STRAWBERRIES

This variety of smaller, more delicate strawberry is also referred to as Alpine Strawberry in English. I had grown them at my cherished Spanish Bungalow, now so close to the sea, berries are more difficult to grow without ample sun. Lucky they are grown in the drier inland commercial farms near me. I used them here in the French Preserves.
