SPRING IN THE GARDEN

As we all know this Spring weather has been a bit wonky everywhere, hard to plan a garden this year. I have held off on planting my lettuce and herbs, the fog has made it dismal here on the CA Coast. However, my tried & true artichokes mananged to squeek out a few artichokes.

ARTICHOKE PANINI

The dreary weather has kept me indoors but I happened on a delighful recipe from Joy’s Once Upon a Thyme featured in Diner’s Driveins and Dives. Joy created a crispy artichoke panini served with the best dressing. They are located in beautiful lush Chehalis Washington.

BASIL VINAIGRETTE

Her salad dressing is so much in demand that they sell bottles of it at the restaurant, really. While I do not have her exact recipe, I have come pretty closed by tinkering with the ingredients. The episode on DDD does tell more about the basil dressing, which she says people want to drink, it’s that good. Photo from website.

Polenta with Gruyère & Herbs

Polenta with Gruyere & Herbs | Bijouxs Little Jewels

Classic Italian polenta goodness with a French twist on flavor-Polenta with Gruyère & Herbs the newest recipe in my Membership Collection.

LATE SPRING

Polenta is one of most comforting dishes I know. Fine grain cormeal cooked with cheese, butter and herbs, perfect side dish for the late spring chilly weather. Along the coast we only get to see small glimmers of spring. The late rain is bringing fresh green shoots in the garden.

ITALIAN COMFORT FOOD

Polenta is one of the favorite Italian comfort foods. My Mushroom Ragu, the rich no-meat version is delish served a top of creamy polenta. But a pure and simple bowl of polenta makes a wonderful side dish or served with a fresh green vinaigrette salad.

FRENCH HERBS

A little change up to the classic herbs added to the polenta by way of France. Thyme, rosemary and tarragon are personal herb favorites, although feel free to include your own favorites.

GRUYÈRE CHEESE

The creamy textures you see in the photos are creamy strands of melting Gruyère cheese, adding a richness to the polenta. Gruyere is my cheese of choice for Instant Pot Canyon Bistro French Onion Soup, a classic recipe. This creamy polenta makes a great side for grilled meats or fish or as a base for your favorite pasta sauce.

Chicken Pho Soup

Soup is comfort. The newest Little Jewel in the Collection is this light and fresh Chicken Pho Soup. A lovely take on classic Pho Soup, and it is made easy in the Instant Pot.

CHICKEN SOUP

This classic bowl chicken soup of comfort is elevated with traditional Vietnamese ingredients you enjoy in Pho Soup, only this is a lighter and fresher version. The broth is clear, with pieces of white meat chicken and tender rice noodles all in a spiced broth. Fresh herbs of cilantro, mint and basil are helped along with slices of fresh jalapeño.

CLASSIC PHO

Classic Vietnamese Pho Soup is traditionally made with beef, yet making it with chicken is also a great option. I became acquainted with the soup via a wonderful family restaurant near my home. I was beginning my career as a Personal Chef and asked the chef if he could share a little about the recipe. I did learn that the key is the broth. This recipe is a simplified version perfect for the home cook, and even better the chicken and broth are cooked in the Instant Pot! As we all know the Instant Pot shaves cooking time off of many long cooking dishes. The chicken is placed in the pot whole for 15 minutes of cooking and emerges falling off the bone tender. The herbs and spices that were sautéed in the pot prior, now come to bloom in full flavor.

INSTANT POT PHO

After the chicken cooks allow the Instant Pot sealing to lower and natural pressure to release. Carefully lift the chicken out of the broth, using the rack helps to lift the chicken carefully to a shallow pan to cool, then the skin is removed and the chicken meat is shredded for the soup. Now it’s time strain the broth and return to a medium pot on the stove. The salt pepper and fish sauce are added, then the shredded chicken, about 3 cups of meat.

BOWLS OF PHO

Now the fun begins, building the bowls of soup. Prepare the noodles per the package instructions, drain and set aside. First I fill each bowl with the hot broth and shredded chicken. Next to each bowl I add tons of fresh herbs, jalapeño, and green onions. Crispy fresh beans sprouts top each bowl. Soup it up! COOKING CLASSIC ITALIAN

This pasta originally hails from Marcella’s Italian Kitchen cookbook. Rigatoni con il Rosmarino e la Pancetta Affumicata. Back in my early cooking days I studied recipes and books from the best chefs from France and Italy. So many legends were still cooking at the time. Many of the books they wrote, such as this book from Marcella Hazan, are still very important today, containing techiques and recipe backgrounds which you do not find in many of the current glossy cookbooks.

To this point, Marcella’s cookbook contains only a handful of small photographs. The classic chefs wrote much more about the cuisine and techniques and I go back to these books in may collection over and over again. There is always something to learn in the world of cuisine.

RIGATONI WITH PANCETTA

A word about pancetta. It is a salt cured pork product, usuallly cubed and browned and added to pasta dishes, the most famous is Pasta Carbonara. Pancetta Affumicata called for here is salt-cured and smoked, similar to bacon, although good grocery store pancetta will work fine.

Fresh rosemary and a high quality butter are what make this simple dish a stand out. No need for costly ingredients, much of Italian cooking relies on what was at hand.You will notice the garlic only lightly flavors the pasta, no garlic overload, so this dish can be enjoyed by all ages.

Garlic White Beans with Spicy Black Olive Vinaigrette

Garlic White Beans with Spicy Black Olive Vinaigrette | Bijouxs Little Jewels

These beans are so much more than just a bowl of beans, they create and contribute to a great number of dishes and are a great new Little Jewel from the Recipe Membership Collection.

SIMPLE ITALIAN FOOD

These beans come together in a flash and are a favorite that I have adapted from Canal House PRONTO! 2013. To keep things simple, use canned beans drained and rinsed. Place the beans in a bowl then start mixing in the other ingredients. With so few ingredients in the recipe using the highest quality ingredients does really make a difference. As you can guess, a really good olive oil is a must! Novello extra-virgin olive oil was my choice as it is in season. I usually find some at Trader Joe’s but only in January, as this olive oil is an early harvest. Fruity green olives and green grass overtones, yum!

TOAST WITH BEANS & SAGE
